Baked Salmon with Pomegranate & Honey


Salmon is an excellent source of Omega-3 Fatty Acids. According to medical studies, it was found that taking 0.45 to 4.5 grams of Omega-3 fatty acids can improve heart function, lower blood pressure, and reduce inflammation.


Salmon is commonly called a superfood due to its abundant health benefits, including, antioxidant (selenium), phosphorus, zinc, potassium, Vitamin B6 group– riboflavin, niacin, thiamin, and folate.


It is also rich in Vitamin B12 and provides nutrients for your hair and skin; an excellent food source for the heart and brain; helps to build and repair tissues after an injury along with protecting bone health, maintain muscle mass during weight loss and improves bone density and strength.


Ingredients


1lb. Salmon

2 Tbsp. Organic/All-Natural Honey

1 Tbsp. Olive Oil

1 Tsp Ground Pepper

1 Tsp Mrs. Dash

½ Tsp Garlic - crushed

¼ Tsp Cayenne Pepper

Pinch of Salt

Juice from 1 Lemon

Seeds from 1 Pomegranate

Celery – chopped

½ Red Onion - sliced


Wash your Salmon in water with some lemon juice and dry off excess liquid. Place salmon in a bowl, pour ½ tablespoon Olive Oil and rub all over. Next, add your Mrs. Dash, garlic, salt, ground pepper, cayenne pepper and ½ tablespoon honey and combine.


You can prepare your salmon with the skin, which is my preferred method, or removed the skin if desired.


Pre-heat your Oven at 400 degrees. On Baking Pan, you’ll add remaining olive oil, then place the salmon on the pan. Bake on each side for 10 minutes then remove from the oven.



To make the topping: - you would place a small Pot over low heat – then add the remaining lemon juice, honey, and pomegranate seeds; stir and allow it to simmer for 5 minutes.


Place Salmon on your favorite plate and pour your sweet and sour pomegranate, lemon juice and honey mix atop the salmon and garnish with your red onion and celery. Served with baked or steamed asparagus. You could also add some carrots as well and your favorite vegetables.


(N.B. – You can bake the asparagus at the same time as the salmon and, you can even use the same baking pan. It gives the asparagus an added flavor.)


Not only will you find this delicious meal option very gratifying – it is also packed with many valuable nutrients from the Salmon, pomegranate, honey, asparagus, red onion to the celery.
